Just finished reading his book of memoir's "Food for Thought: Essays and Ruminations". I have followed Alton Brown through his whole career. He is a great teacher and very entertaining! He knows his stuff. He never steered me wrong, ever. My favorite food - fried chicken. Nice to know all these tips he pointed out. Never heard of many of these tips before. He is so original.

I don't believe even Mr. Brown stands behind this recipe today but I do. Best chicken ever, now and always.

Good Eats was my favorite cooking show, because Alton didn't just show you how, he explained why. There's science and stuff.

How does breaking down the chicken myself (vs purchasing pieces), enhance the flavor of the end product?
@JSYK2 22-02-2023 09:19
Sorry Alton but I must disagree. My Mom seasoned with salt and pepper fried in Crisco really low and slow slow slow in an aluminum skillet. It tasted better than marinated overnight with 13 herbs and spices or garlic powder or any number of fancy spices it seems necessary to use today. Call me "Old Fashioned" you damn bet. Edit: AND IT TASTES LIKE CHICKEN - imagine that!!!

Can I use corn oil or peanut oil instead of shortening? Will that still be good eats?
