But if bread gets too stale (After letting it sit out for 48 hours) it'll become fragile (Used very stale bread which broke in half after pressing it down into the custard but I used Italian).

I make my custard the night before too but add cinnamon, cloves, nutmeg and vanilla or almond flavoring. It tastes so good sitting overnight. I also use heavy cream

I remember watching Good Eats ALL the time as a kid. I was really interested in the science aspect of the show and then, when I became a teen, I realized I retained the knowledge of how to cook things and what things did what and what temperatures were safe.

The most important part is to use stale bread, minimum of 8 hours.... OR! Hear me out. You can toast the bread, lightly and dry it out immediately. Like... toast... oh my god.

Letting the bread get stale by exposure to household air is gross. Unless you live in a sterile environment there are dust, allergen, animal and/or human dander, household smells that will be absorbed by the bread! Simply pop the bread in the toaster for a minute! It'll get dried out without the contamination. Also...add a sprinkle of nutmeg to the custard! Finally.... sprinkle a tiny amount of cinnamon on the french toast just before you pour your warmed up 100% maple syrup on it. You can also dry the bread in the oven!
