Before anyone uses the fryer make sure to watch Alton's video. 1. oil must be placed in there to the halfway mark on the pot do not fill it all the way up. 2. do not place the turkey in there frozen frozen turkeys can be turned into a fire bomb. 3. if you are putting the turkey in their lower it slowly and turn off your flames any open flame can cause a fire. 4. have a lid and a fire extinguisher on standby in case anything goes wrong do not use water. And 5. do not do this indoors or in the garage that is how a fire can start.

I prefer to dry brine it. It takes the moisture away from the Skin only and penetrates the salt flavor deep into the turkey, and it only takes a couple hours in the fridge before hand. I opt to Inject for flavor. Just finished eating mine. Mmmmmmmm thank you Alton for the walkthrough! Love ya man!

Use the displacement method to figure out where your oil will be before and AFTER the bird is in your deep fryer. I suggest using water instead of oil and marking the lines with a marker. (Then go back and use oil you rubes.)

Obviously, we don't know what he said after, but he didn't answer how to avoid burning down the house by talking about how to determine the right amount of oil. The turkey derrick is a wise invention, but won't put out burning oil. Nevertheless, #ABrocks
